Hatzidakis 2004 Vin Santo, Santorini, Greece [375ml Half Bottle]
Winemaker: Haridimos Hatzidakis
Varieties: Assyrtiko 80%, Aidani 20%
Terroir: Ungrafted, dry farmed 100 year old vines planted in Volcanic, pumice and igneous lava soils.
Vinification: Grapes harvested in the second half of August and sun dried for 15 days. Sundried grapes are crushed. Clarification and fermentation of the concentrated grape must with selected yeasts for 3 months in stainless steel tanks under controlled temperature 20 – 22 °C.
Aging: The wine is aged in tank for 3 months before being transferred to 250L and 500L neutral oak barrels. The wine is then aged 14.5 years before release.
Residual Sugar: 255g/L
Tasting Notes: Intensely aromatic, with bold flavors of toffee, bergamot, dried figs and hints of smokey cocoa. The wine has intense sweetness on the palate, but is perfectly balanced by bright acidity and the slightly oxidative notes of the aging process.
Enjoying: Serve slightly chilled and pair along with sweet desserts or earthy creamy blue cheese.
