COS MV Extra Brut Metodo Classico, Frappato Spumante
Three friends founded Azienda Agricola COS, in 1980: Giambattista Cilia, Cirino Strano and Giusto Occhipinti. The acronym of their last names is where the name for the winery – COS – comes from.

Varities: Frappato di Vittoria 100%.
Terroir: Vittoria, in South-Eastern Sicily. Planted 230m above sea level on red soil, medium consistency; formed of sub-alpine sands of Pliocene origin, of limestone - siliceous nature. Vines are minimum 15 years old.
Vinification: Harvested the end of September into the first days of October, with spontaneous fermentation on the skins with indigenous yeasts, in concrete tanks and amphora. 2016/17 harvests bottled in fall 2017 during harvest. Fermented and aged in amphora with only indigenous yeast. Secondary fermentation was achieved through the addition of 2017 grape must added to 2016 still wine and then bottled with no sugar added. Disgorged in February 2019 with no dosage.
