Farming: Certified organic

Vineyards / Soils: Blue Marl predominantly; from various estate vineyards around Pupillin. 25-30 year old 

Vinification / Aging: Hand harvested. Settled and started in steel, then moved to barrel. Aged in 228L/400L used barrels for approximately 40 months. Wine is not topped off, and is aged under 'sous voile' to protect it from oxidation. 

Tasting Notes: A lovely introduction to biologically-made wines of the Jura, this salty, fresh white has strong aromas of freshly peeled yellow apple skins, salted pears, and a hint of charred almonds. Finishes dry. 

  

The domaine was established in 1990 and presently encompasses 7.5 hectares of vineyards. Half of Jean-Michel’s production is devoted to red (Pinot Noir, Poulsard, Trousseau) and half to white wine (mostly chardonnay, with a bit of Savagnin). Since 2003 all vineyard practices and applications have been organic with certification in 2012. In the cellar, Jean-Michel adheres to traditional methods of winemaking. Fermentation takes place via native yeasts, and sulfur additions are only utilized when deemed necessary. Elevage takes place in foudres for the red wines, and a combination of older barrique and foudre for the white wines.
