Vinification: The “II” is aged only in stainless steel. The estate’s premium wines are treated with a minimalist approach and with the highest respect in the cellar. Gentle clarification, natural and spontaneous fermentation and the abandonment of fining agents create wines with a distinctive indigenous and very elegant style. Pumping the juice or wine is never necessary in the gravity flow winery, allowing for minimal, and gentle vinification.

For all the wines we bring in from Germany, the most uncommon would have to be Sauvignon Blanc. This is not a variety that this neck of the woods is known for, as what really grabs our attention in the Pfalz is Riesling. But every once in a while we find something so good, so unique, that we must bring it to DECANTsf’s shelves. Make no mistake, Von Winning makes plenty of Riesling, but they are one of the few producers in Germany making sauvignon blanc at all, and probably the only one making three different cuvées of it!

The estate is named for Leopold von Winning, a son-in-law of the Deinhard Family (who owned the original estate on this property), and founding member/first president of the Pfalz VDN, an organization that created very high standards for premium winemakers in 1910. This estate was purchased from the Deinhard family in 2007 by Achim Niederberger who sought to reinvigorate the region with quality winemaking that had been its fame for centuries past. The vineyards are biodynamic and only homeopathic methods are used for vine health. Planting, pruning, and harvesting is dictated by the phases of the moon. Sounds pretty mystical for such a high-quality producer, but when something is this great, we must trust the magic.

So, why Sauvignon Blanc, of all things? Well, Pfalz is a natural continuation of France’s Alsace region, affected both by the moisture-blocking Vosges Mountains to the West, and the reflective and temperate Rhine River to the east, and Von Winning Winery is about a 90-minute drive north from Strasbourg, France. This sort of rain shadow effect from the mountain range keeps storm clouds at bay so the sun can shine unabated, making Pfalz the warmest wine-growing region in Germany (which isn’t saying a lot, it’s still considered cool-climate), This means Sauvignon Blanc can sit the fence of ripeness between the passionfruit-like tropical notes of a sun-drenched Sonoma while simultaneously having a flinty, mineral tension reminiscent of Sancerre. Not many places on earth can strike this balance. What other secrets are you hiding, Pfalz?

Von Winning makes three bottles of Sauvignon Blanc, and we are enjoying the “II”,  which is harvested mostly from the 1er Cru vineyard Paradiesgarten (yes, the ‘Garden of Paradise’), and is then fermented spontaneously on its indiginous yeasts, aged in stainless steel, and bottled with no fining and only limited filtration.

We know it's only January, but as we write this it is currently 69°F and sunny. I think a Dungeness Crab Louie and a glass of Von Winning Sauvignon Blanc is what we’ll be having for lunch.
