Winemaker/Chef du Cave : Christophe Aguilar

This family estate located in the Costières de Nîmes takes its name from a wild, aromatic herb “La Patience” that can be found throughout the vineyard. After a decade of managing the winemaking at a local cooperative, Christophe Aguilar decided it was time to make his own wine. Today Christophe farms 60-hectares of vines, these were the same soil that his grandfather farmed fifty-years ago, with deep respect and understanding of its terroir. Domaine de la Patience is an organic wine estate located near the Pont du Gard. It is in the magnificent wine cellar dating from 1930, all in cut stone that Christophe Aguilar vinifies his vintages with total respect for the fruit. By preserving natural yeasts, controlling vinification temperatures, filtering his wines to the minimum and limiting Sulfur use, he pays tribute to the fruits of the vine. He, therefore, chooses to respect the ecosystem and the terroir that it preserves by cultivating his vines organically. He also perpetuates his vineyard by choosing grape varieties adapted to the region.
