In 1818, Nicolas François Billecart and his wife Elisabeth Salmon founded the house of Billecart-Salmon in Mareuil-sur-Aÿ, which now stands as the oldest continuously family-owned and operated house in Champagne. The estate is currently managed by the family’s seventh generation, brothers François and Antoine Roland-Billecart, while the cellars lie in the hands of Florent Nys.

Farming: Sustainable

Varieties: 100% Pinot Noir, 2014 base wine from the villages of Ambonnay and Verzenay of the Montagne de Reims.
Soil / Terroir: The vineyards from the Montagne de Reims are ideally facing south, on chalk subsoil, with roots buried deep underground.

VinificationBase wine 2014, 22% reserve wines from 2012. Vinification in stainless steel tanks. Ageing on lees for 65 months.  Dosage: 2 g/l

Tasting Notes: En elegant and subtle Champagne, notes of cherry blossom and violet, with hints of biscuit, a touch of honey and raw butter. The wine finishes with citrus zest and juicy acidity. Drink now up up to 5 years.
