Bordiga 2016 'Excelsior' Riserva, Piedmont, Italy [750ml Vermouth]

A specialty product from the infamous Bordiga Distillery in Turin, the Excelsior Riserva is a vintage-based vermouth. Each batch is marked and labeled by the vintage of the wine (they do not reserve any for consistency as with the other vermouths, so the vermouth truly shows vintage variation and terroir.) Overall the time from harvest to bottle to consumer is nearly 3 years. It is a time consuming project for the Bordiga team but they love it. They consider themselves one of the founders of modern vermouth and the Excelsior is a tribute to this legacy.

Base Wine: 30 -45% Barolo from the 2016 vintage, an excellent year! The remainder of the base wine is Cortese and Moscato from Piedmont. 

Vinification: Moscato and Cortese are blended together with the Barolo and the botanical infusions are added according to the recipe. It is then aged in barrel for 3-6 months when it is tasted weekly by Mario, the master distiller. When he determines it is ready, the vermouth is transferred to stainless steel, then rested again for at least 30 days. Again, when he feels it is the right time, the vermouth is bottled, and then rested for 30-60 days.
