Next-generation artisanal Mallorcan viticultor in Binissalem, Mallorca dedicated to resurrecting indigenous varieties like mantonegro, callet, moll, giró ros. Considered a "viticultura en miniatura", Ca'n Verdura focuses on making small-batch wines from a micro-winery located in a converted auto-garage. Practicing minimum intervention winemaking and low impact viticulture.

  • Winemaker: Tomeu Llabrés
  • Farming:  Organic
  • Variety: Moll, planted in 1958
  • Terroir: Cal vermell soils, consisting of red, iron-rich clay and limestone with small and medium-sized galets. The flagship Supernova Blanc originates from the best plots of old-vine moll from bush-trained vineyards planted in the 1950s in the villages surrounding Binissalem, including the village of Santa Maria, which are considered the finest vineyards in the area. Grapes come from the Cas Pastor, Cas Verd, Son Borrás, and Plà de Buc plots, planted at 130 meters.
  • Vinification: After manual harvest in small boxes, the must is held at cold temperatures for four days to separate the gross lees naturally. 20% is then fermented in 500L French oak barrels, the rest in stainless steel tanks.
  • Aging: After five months of aging on the lees, with stirring of the wine in barrels for 3 months, the wine is clarified using bentonite clay before being bottled.
  • Tasting Note: This complex island white is medium bodied, with a profile of citrus, chamomile, fresh herbs, fennel, and white fruit notes, which provide great freshness.
  • Vegan.
