Established in 1948, Cavallotto was one of the first families of the area to bottle. The family farms one contiguous hiil, Bricco Boschis, in Castiglione Falletto. They are the sole owners of this hill and the only ones to bottle Bricco Boschis. The Cavallotto’s are firm believers in organic farming, they worked with the local university to develop methods that worked for their particular climate. They no longer use copper or sulfur in the vineyard, opting for essential oils of grapefruit seed and other less intrusive remedies to treat the vineyard. 

Grape Varieties: Nebbiolo 

Soil Type: Nebbiolo from Bricco Boschis hill, most vines planted in 1971 at 350m on south facing steep slope. Bricco Boschis is a monopole that the Cavallotto family has been farming since 1928. This area, Castiglione Falletto, is where the serravallian clay of the eastern Barolo zone meets the more sandy tortonian soils from the west, making for wines of both serious structure and intense aromatics. 

Vinification/Oak Usage: Fermentation takes place in a horizontal stainless steel tank that can slowly and consistently rotate the juice over the skins for 18-30 days. The wine is pressed off the skins into cement tank for malolactic fermentation. The following spring the wine is transferred to Slavonian oak Botti for 15-18 months then 6 months in bottle before release.
