- Variety: Chenin Blanc
- Terroir: From a southeast-facing parcel located within the Coteaux de Layon appellation. Ground coverage alternates yearly between grass and herbs every other row for the health of the vines and nutrients. Sand and gravel on a base of schist.
- Vinification: Grapes are hand-harvested and pressed whole cluster to protect the grapes and act as a natural filter. Native yeast. Débourbage (natural settling of must) followed by native yeast fermentation (with malolactic fermentation) in stainless steel.
- Aging on the lees in stainless steel for six months.
Now, as Yves and Marie-Annick's daughter, Anne, begins to take the lead, the Domaine is converting to organic viniculture and exhibiting exciting new energy - and fascinating wines.
At Domaine de la Bergerie, the entire operation is a family affair: Following stints with Alain Ducasse and Joël Robuchon, Anne's husband, David, has opened a beautiful restaurant on the property. His local cuisine is a lovely complement to the outstanding sparkling and still wines made here.
