Located in the wine commune of Saint Cyr en Bourg, Domaine Fouet has continued the family tradition of winemaking for 6 generations. In the heart of the Saumur Champigny appellation, Julien Fouet now runs a 20-hectare vineyard, combining modern techniques while respecting tradition.
- Winemaker: Julien Fouet
- Farming: Organic Practicing
- Variety: Cabernet Franc
- Terroir: This cuvée comes from a 100% limestone terroir, 40-year-old vines.
- Vinification: The bunches of grapes are harvested manually in openwork boxes.
Delicate pressing without notches. The Ancestral method is made in a natural way, without adding sugar and without adding expedition liqueur. A sparkling wine made naturally, without adding yeast. Aged for 4 years in cellar at a constant temperature of 12°C, this Pet' Nat expresses both the effects of this slow maturation on the lees and the slightly oxidative aromas due to the controlled aging in the bottle.
Wine not disgorged, causing a slight cloudy veil and a small deposit at the bottom of the bottle.
- Tasting Note: Fresh and light on the palate, this pet-nat is shockingly complex and elegant across the palate. Aromas of fresh strawberries and rhubarb with a fluffy and soft mousse across the palate.
