Domaine Moreau-Naudet 2020 'Les Forets' 1er Cru Chablis, Burgundy, France
Heavily influenced by Vincent Dauvissat, the late Stéphane Moreau was a gifted vigneron who quickly made his impact in the wine world, producing ethereal Chablis that exemplify Chardonnay at its textural and mineral peak. After his early passing in 2016, his wife has taken over the reins of the estate, and continues to channel Stéphane's talents and winemaking philosophies.

Terroir: The domaine's holdings in Forets is made up of two parcels, totaling just under 2 hectares. The older parcel is of 60 year old vines, and a second is made up of younger vines (25 years old). Forets' soil is made up of a variety of different clays and decomposed rock over limestone, which together with a southeastern exposure create a warm microclimate.
Vinification: Hand harvested and fermented with indigenous yeasts, and a long maceration on lees. The wine is then aged for an average of 18 months on lees in a combination of stainless steel and 600-liter French oak barrels of which only 20% is new. (Most of the wine is aged in stainless steel, with around 2/3 in steel and 1/3 in oak.)
