Terroir: 60+ years Marls and calcareous clay from the Kimmeridgien period
Vinification: Hand harvested and fermented with indigenous yeasts in 95% in stainless steel and 5% in wood. Temperature is controlled through fermentation in steel but not in wood. Malolactic fermentation is completed.
Aging: 12 to 18 months in barrel
Tasting Notes: This medium bodied Chablis captures a richer, more concentrated side of the Montée de Tonnerre vineyard. Bruised yellow apple skins and bosc pear and supported by electric acidity driven by lemon zest and hints of white flower. The finish is intensely mineral, with wet chalk notes rounded by whisps of toasted almond, lent from time in barrel.
