The Biatta family can date their existence back to Brescia, with documents dating to 1196, when Giovanni’s great-grandfather, Camillo Biatta, was négociant éleveur, an old noble profession passed from father to son. Giovanni Biatta, the forefather of “Le Marchesine”, acquired his first three hectares in the Franciacorta area in 1985.

  • Vinification: Hand harvested into small boxes. Whole grapes are pressed softly in a pneumatic press. The must of Pinot Noir undergoes a light maceration of about 6 hours, and is then blended with the Chardonnay. After static and physical separation from the impurities of the must at low temperatures, the inoculation of selected yeasts takes place for fermentation in stainless steel tanks at a controlled temperature. This is followed by racking and lowering of the temperature to about 10 ° C to avoid malolactic fermentation. Once the “liqueur de tirage” has been added, it is bottled, capped with the crown cap and laid down in a stack for the second fermentation. Aged at least 36 months.
