- Vinification: 100% de-stemmed, indigenous yeast fermentation, minimal punch-downs. Aged for 18 months in barrel (20% new oak). Nicolas strives to use sulfur only prior to bottling. Total sulfur: 20-45 mg/L.

These vines were owned by Nicolas' grandparents. Some went to his uncle and some to his father, but he was able to acquire both portions.
