Ravines Wine Cellars makes dry, classical, terroir-driven wines on over 130 acres of estate vineyards. Founded in 2001 and family-owned and operated ever since by Morten and Lisa Hallgren, Morten was raised and trained as an oenologist / winemaker in Provence and Bordeaux France, before moving to the region and pioneering the bone-dry, mineral-tinged Riesling style that the region is now famous for. Ravines utilizes minimal intervention in the cellar and employs sustainable winegrowing practices on steep-sloping vineyards with limestone and shalestone soils.

Terroir: White Springs and 16 Falls Vineyards in the Finger Lakes AVA of New York, close to Seneca and Keuka Lakes. Average 20 year old vines, planted on limestone and shalestone soils.
Vinification: All lots were destemmed into open-top, stainless steel fermenters. Extended skin-contact of 3-4 weeks with manual punch-downs and pump-overs. Spontaneous malolactic fermentation in casks. Bottled in January 2023 after 14 months in 3-year-old, 2000 liter Austrian Oak casks
Tasting Notes: Incredibly fresh and inviting with aromas of redcurrant, cranberries and mountain herbs. The palate is pure and elegant, with notes of raspberries and hints of earth and spice. A perfect rendition of Finger Lakes Cabernet Franc, aged for a year in our 6-year-old, 2000 liter Austrian and Hungarian Oak casks. 13.4% ABV
