Roccafiore 2018 ‘Fior Fiore’, Grechetto di Todi, Umbria, Italy

  • Soil / Terroir: From near Chioano, just east of Todi. The soil is whitish clay, rich in limestone and chalk. Single vineyard, just 1.5 ha, planted with the oldest vines.
  • Vinification: Fermentation with native yeast in temperature-controlled stainless steel tanks. Unfiltered
  • Aging: One year in old Slavonian oak barrel, on lees
  • Tasting Notes: Aromas of white flowers and peach. Dense and mineral-driven palate with, white pepper, lime curd, and excellent acidity.

  • The Baccarelli family comes from the sustainable energy business and employs the following measures on the property:
    • reducing the co2 using solar panels, all the required energy comes from this source;
    • reducing any environmental impact using organic fuels on the tractors (sunflower oil);
    • using light-glass bottles for reducing the weight on the shipping process;
    • saving rainwaters in a reservoir that is used for irrigation (not of vineyards);
    • low intervention and organic farming system on the vineyards for the care of the soil;
    • reducing the use of electric machinery on the winery using the gravity
