Terroir / Soils: From the island of Cyprus, 60-year-old ungrafted vines at 800m altitudes in sandy volcanic soils. All vineyards are terraced.
Vinification: Handpicked grapes, feet and hand pressed. Open top oak barrels (300L) fermentation, 40 days skin contact, natural fermentation, regular punch downs.
Tasting Notes: Textural and complex, this orange wine explodes with texture and hints of tannin, making it structured and serious. Aromas of orange oil and bergamot dance with smoky limestone notes and a finish of white flowers.
Pairings: Fish, Fried calamari, Curry, Pork, Hard Cheeses, and Charcuterie.
- This is the most widely planted white variety on the island. It has only now started to show its true potential. Evident to this is its high versatility as a vine and a wine. Planted between 300m- 1490m in altitude. Tsiakkas winery produces 6 different expressions of this variety (Xynisteri, Pitsilia AOC, Rose (Blended), Orange, Commandaria, and Zivania (Spirit).
