Valravn 2018 Cabernet Sauvignon, Sonoma County, California
- Farming: Sustainable
- Variety: 100% Cabernet Sauvignon
- Terroir: Sourced from vineyards stretching to the northwest in Rockpile, southeast in Moon Mountain and Sonoma Valley, and far east, up in the Mayacamas mountains. A combination of elevations, aspects, and soil types (alluvial, loam, volcanic) allowed us to blend the components for a seamless composition.
- Vinification & Ageing: In the cellar, hand-sorted grapes undergo an extended pre-fermentation cold-soak followed by primary fermentation in stainless steel. Following primary, the wine was transferred into mostly French oak barrels (about one-third new) for 18 months aging.
- Tasting Note: Reminiscent of classic ripe-vintage Bordeaux - refined and well defined with a lovely play of savory and sweet. Cassis, black cherry and blackberry fruit is accompanied by opulent notes of dark chocolate, espresso roast, and graphite. Silky tannins with amazing richness on the palate.
- Scores: 91 points, Wine Enthusiast: “This attractively priced 100% varietal red is aged in French oak, 30% of it new, an impressive addition to the flavors of the wine. Cherry-covered chocolate richness is complemented by a bright thread of acidity and tension in this structured, complex wine.“ - Virginie Boone
