Vinification: Fermentation under controlled temperature in stainless steel tanks for
about 20 days, with 8-10 soft daily pump-overs.. Aging: One year in French oak
tonneaux (110 gallons), 3 years in 60 gallons Slavonian oak barrels. Filtered and
bottled.
Tasting Notes: Medium to full bodied, this powerful and structured Sangiovese is still in it's youth, ready to be cellared for up to 15-20 years. Aromas of sour black cherry, currants, stewed tomato, crushed oregano and saddle leather pop from the glass, and the taut acidity is framed by pressing tannins that will integrate with aging.
