Winemaker: Vincent Roussely
Farming: Organic Certified, Biodynamic practices (not certified)
Variety(s): Sauvignon Blanc
Terroir (soils, elevation, etc): Farmed from two main vineyards, one on the banks of the Cher river, featuring alluvial silt over tuffeau limestone, as well as vineyard central on the property named ‘Le Clos’ featuring clay over a tuffeau limestone bedrock.
Vinification: The wine is vinified in stainless steel, in a cave dug underneath the Le Clos vineyard, into the limestone of Angé.
Aging: Given the limited space within the winery, the wine is aged small in stainless steel spheres, allowing for easy movement and organization in the winery.
Tasting Note: A juicy, fresh, and thirst-quenching Sauvignon Blanc. This is essentially a Sancerre style without the price tag. Coming from Touraine, this Sauvignon Blanc ticks all the boxes. Fleshy stone fruit, bright acidity, and minimality.
