- Farming: Organic
- Variety: Chardonnay
- Terroir: coastal mountains vineyards in the Casablanca Valley, 12 miles from the Pacific Ocean with direct exposure to the cool marine climate. The soils here are mainly granitic with a high presence of Quartz, taking green shades from other oxidized minerals by the sea mist.
- Vinification: The grapes are hand-picked by local farmers and their families.
The winemaking process is simple and with minimum intervention. The wine is fermented in stainless steel tanks at a low controlled temperature. After fermentation, there is careful work for 3 months keeping the wine in contact with its fine lees to add texture and complexity.
- Aging: A small proportion aged in selected neutral French oak for up to 4 months
- Tasting Notes: Jasmine, crisp notes of pear, white peach and hints of almond.
